Soya chunks 65 also called meal maker 65 is a snack or starter made by frying the marinated soya chunks and tossing with normal tempering to give that street style taste. Soya chunks are high in protein and are loved by most of the Indians. This starter recipe is a must try for your weekends or party and I am sure you will love it.

Soya chunks fry

Soya chunks are called a vegetarian version of meat and tastes so spongy and delicious, and they are 100% vegetarian and is also a vegan source of protein and are plant based. They are a deep fried fritter and that masala coating makes it lip smacking and delicious. Though they are deep fried/air fried they retain their juiciness inside and the crust is what becomes crispy. This makes it even more yum !!

TIPS AND NOTES

  1. Soya chunks generally absorbs more water, hence removing the excess water by squeezing it is important for this recipe. This makes it less soggy and absorbs the masala coated without being diluted.
  2. The marination masala with curd must be mixed and coated well before adding the flour. This makes sure the masala is directly absorbed by soya chunks and tastes good.
  3. The curd and soya chunk’s moisture must be enough to coat the flour. But based on the quality of flour, some water may be required to mix and coat them. So don’t add too much of water which results in thin batter and flour will not be coated properly.
  4. If you are vegan, go for vegan curd which doesn’t make much difference in taste.
  5. In case you are health conscious and doesn’t prefer deep frying, you can always opt for air frying them, which will work the same way. Keep the air fryer in 180°C, for 10 minutes but always check for its crispiness in between as each air fryer works different.
  6. Adding chaat masala gives a tangy and a fabulous taste to the soya 65 which makes it taste exactly like street style food.

MAJOR INGREDIENTS

Soya Chunks

Soya chunks are textured vegetable protein (TVP) which are made by extracting soybean oil. They are available majorly in two different sizes in Indian market. One is bigger and will be more juicy which is mostly preferred for soya fry, biryani and gravies, whereas the other is quite small and is preferred for pulao, gravies and for dry curries. So for this recipe we are using the large ones.

Spice Powders

The major spice powders used in marination are chilli powder, garam masala and coriander powder. Kashmiri chilli is used additionally to give that street style red color without adding any artificial colors. In addition to it, you can also add Amchur powder and cumin powder but I don’t prefer them as we saute it with chaat masala at the end which gives a unique taste and satisfies the tanginess too.

Flour

For the coating , Maida , rice flour and corn flour is used. Maida will be a little higher than the other two. Rice flour gives the crispiness to the crust and corn flour helps in binding all of them.

Oil

For deep frying, a normal vegetable oil with no specific flavor must be chosen. In case you want to air fry them, just spray some oil to coat the crust for better texture and outcome.

STEP BY STEP INSTRUCTIONS WITH PHOTOS

  1. Take soya chunks to a bowl, add hot water and salt to it. Leave it closed for 15 minutes. You can also cook directly in heat with water and salt. Both the way works.
  2. Once it is cooked, it would have turned spongy.
  3. Now squeeze the water in it and keep aside.
  4. To the soya chunks , add all the marinate masala such as turmeric, chilli powder, coriander powder, garam masala and ginger garlic paste and mix well.,
  5. To it add curd, salt and coriander leaves
  6. Add the Maida, corn flour, rice flour and mix well.
  7. Coat the soya chunks well and marinate for 20 minutes
  8. Fry the soya in hot oil at medium flame.
  9. Fry till the crust is crispy and achieves a bright color
  10. To a pan, add oil, mustard seeds and curry leaves
  11. Once it crackles, add the fried soya chunks, chaat masala and mix well. Switch off once chaat masala is added.

  12. Serve Hot and enjoy , Happy eating!!
